CULINARY LEARNING JOURNEY – Sunday, September 1 to Friday, September 6
Join fellow ICA members for a Canadian culinary experience hosted by Debra Lykkemark and Michael Harries of Culinary Capers Catering and Special Events.Your adventure begins when you arrive in one of the most beautiful cities in the world. Home to the 2010 Winter Olympics, Vancouver is a cosmopolitan city in an amazing port setting ringed by towering mountain peaks.
The local culinary scene is a reflection of the diverse multicultural population, fertile farmland and abundance of fresh seafood in the region. Delicious, fresh, local, organic, sustainable, vibrant and inspired capture the essence of Pacific Northwest cuisine.
Fly or drive into Vancouver, BC on Sunday, September 1, 2013 and head to Granville Island, home of the renowned local market. Our seaside boutique hotel, The Granville Island Hotel is a short walk from the market. Expect mostly sunny blue skies with highs of 70° F and lows of 55° F.
The west coast lifestyle is very casual and laid back. Pack for foraging for mushrooms, a day trip on a fishing boat, cycling the seawall and casual dining.
Sunday, September 1st
Arrival day will kick off the festivities with a welcome dinner. An Interactive Chefs Dinner featuring three local chefs preparing local seasonal dishes paired with Canadian cocktails, beer and wine.
Monday, September 2nd
A guided tour of Granville Island Market where you will accompany a chef who will introduce the purveyors, provide samples of their artisan foods and discuss the current food trends on the west coast.
After the market, it will be all-aboard for a First Nations Boat Trip along the breathtaking inland waters of Burrard Inlet where you will be immersed in the culture and history of our First Nations people, hear their traditions and experience a traditional First Nations salmon barbecue.
Dinner will be served at a traditional Aburi-style Japanese sushi restaurant complete with a Sake paired menu and an interactive visit from the executive chefs.
Tuesday, September 3rd
Float planes will depart in the morning from Vancouver Harbour for a 45-minute flight to Vancouver Island. The birds eye view will provide spectacular aerial vistas of the city surroundings and an overview of the stunning scenery of the Gulf Islands. Our next stop is a guided tour of the Cowichan Valley, a rich and fertile area where we will forage for mushrooms with Chef Bill Jones, stop at Venturi-Schulze for a tasting of their organic wines and traditionally crafted aged balsamico, and then get up close and personal with one of North America’s only herd of water buffalo and explore local cheese making at Fairburn Farm.
On the road again, our next stop will be the famous Butchart Gardens for a tour of this amazing world class garden and a private tapas dinner and wine tasting in the garden with a senior member of their culinary team.
Wednesday, September 4th
Breakfast hors d’oeuvre, bubbles and a tour of Culinary Capers will kick start our day. Then we all hop on a trolley for a quick trip to our historic Chinatown. Vancouver is home to the second largest Chinatown in North America. Local Chinese culinary guides will take us on a walking tour exploring the food shops and learning about Chinese cuisine, followed by a sumptuous Dim Sum.
Apres-lunch, we will jump on bikes for a leisurely pedal around the seawall and a guided tour of the amazing Biennale art installations that adorn our parks and beaches.
Dinner tonight will be hosted by Debra and Michael and feature a west coast style dinner conceived by Executive Chef Margaret Chisholm who was awarded the CATIE for 2011 for Catering Chef of the Year.
Thursday, September 5th
Rise and shine, we’re off to the mountains! Our first stop will be the fertile farmlands of Pemberton for a tour of North Arm Farm. A highlight of the visit will be a 100-mile alfresco lunch catered on the property and incorporating produce from the farm.
Following lunch we will visit the outdoor adventure mecca of Whistler Village. Skiing, snowboarding, mountain biking and several golf courses provide year round recreation at the resort. This afternoon you will be open to explore and indulge in sightseeing or visit the local shops. For those feeling more adventurous, for an additional charge, we will arrange rides on the Peak to Peak gondola, zip lining or a pampering spa treatment.
Dinner this evening will be in the village at Araxi, the best restaurant in Whistler, where their acclaimed Chef James Walt will create an exquisite farm to table seasonal dinner paired with Cascadian wines.
Friday, September 6th
Breakfast can be enjoyed at the hotel at your leisure.
Sadly, it will be check-out time…unless of course you wish to extend your stay! If you do decide to extend your visit, let us know and we will set you up with a list of things to do in beautiful BC.
Price is all-inclusive (with the exception of the optional activities in Whistler on Thursday).
Welcome dinner is included on Sunday. Breakfast, lunch and dinner are included for Monday, Tuesday, Wednesday and Thursday. Friday breakfast at the hotel is included.
